Miniature Cheesecakes
Ingredients
12 oz. cream cheese 1/2 cup sugar 2 eggs 3/4 tsp. vanilla Topping 1 cup sour cream 1/2 cup sugar 1 tsp. vanilla strawberry preserves |
Directions
Let cream cheese soften in medium size bowl; add 1/2 cup sugar and cream together thoroughly. Add eggs, one at a time, beating well after each addition. Add 3/4 tsp. vanilla and beat until smooth and creamy. Place paper baking cups in muffin pans and, using two teaspoons, full each one 2/3 full. Bake in preheated 300-degree oven 20-25 minutes. cool 10 minutes. (Cakes cave in slightly in center.) Topping In small bowl, thoroughly mix sour cream, sugar and vanilla. Using two teaspoons, put about a half teaspoon of topping mixture on each cake. Top each with small amount of preserves. Return pans to oven and bake an additional 10 minutes.
