New England Cranberry Pie
Ingredients
1 9" pie crust. 1 8 oz. cream cheese, softened 1 14-oz. sweetened condensed milk 1/4 tsp. lemon juice* 1/4 cup brown sugar (firmly packed) 2 tbsp. cornstarch 1 16-oz. whole cranberry sauce 1/4 c. cold margarine or butter 1/3 c. flour 3/4 c. walnuts, chopped *I use more |
Directions
Preheat oven to 425 degrees. Bake pie shell for 8 minutes. Remove from oven and reduce heat to 375 degrees. In large bowl beat cheese till fluffy. Gradually beat in milk untill smooth. Stir in lemon juice. Pour into cooled pie shell. In small bowl combine 2 tbsp. sugar and all of cornstarch; mix well. Add cranberry sauce. Spoon evenly over cheese mixture. In bowl cut butter into flour and sugar until crumbly. Stir in nuts. Bake 45 to 50 minutes at 375 degrees until bobbly and golden. refrigerate. Freezes well. Margaret Navoni |
